Ingredients:

  • 1x medium avocado190g (250 kcal)
  • 1x ball of mozzarella 125 (~300 kcal)
  • 1 x baby gem lettuce (15 kcal) or rocket salad
  • 1x medium tomato 100g (25kcal)
  • 1x table spoon of pine kernels 10g (65 kcal)
  • Big bunch of leaves of basil

For the dressing:

  • 20x sprays of olive oil (teaspoon)(20kcal)
  • 2x tbsp balsamic vinegar (15kcal)
  • Salt & pepper to your taste (0k)

 Method:

  1. Slice/chopped all ingredients as you like, sprinkle pine kernels and basil leaves.
  2. To taste, add salt pepper and add the dressing.

Tip: Serves: this can be portion for one or served between two people. If split between two you can add a small slice of nice whole meal toasted bread (100kcal), but if dieting better to ditch the carbs!
