Halloumi and beans dish

Serves: 1 (double up ingredients if cooking for two)

Ingredients for one:

Halloumi 60g – 200 cal

Trim green beans 170g – 50 cal

1/2 x Butter beans can- 55 cal

1 tbs olive oil- 50 cal

1 tbs balsamic vinegar or lemon juice

1x fresh chilly (optional)

2x cloves of garlic

Salt and pepper to season

Method:

Steam green beans (my preferred choice of cooking veg- most of the vitamins & minerals will be preserved. At add tablespoon of olive oil in the pan and cook halloumi, 2 min both sides. Drain and wash butter beans and warm them up in a microwave (or steam) for 1 minute.

Sauce: finely chopped garlic and fresh chilly add olive oil and balsamic vinegar or lemon juice, plus salt and pepper to taste.

Arrange cooked ingredients in the plate and pour over the sauce. Enjoy.

TIP: This is super easy recipe to make and one of my favourites!  If on the calorie restricted diet reduce the amount of halloumi cheese since this is most calorific ingredients in the meal. Suggested serving size of halloumi is 30g, but this recipe is generous serving.
